Holiday Showcase 2025: Siren Shrub Hand Pies

We’re spotlighting Siren Shrub and a delicious hand pie recipe that blends local flavor with simple, feel-good baking. Because around here, great gatherings start with great makers.
Ingredients
DOUGH
1 cup plus 6 Tbsp. butter
2 tsp. salt
2 cups all-purpose flour, plus more for surface
6 Tbsp. buttermilk
FILLING
1 orange
8 oz. fresh or frozen cranberries
1/2 cup granulated sugar
1 1/2 tsp Siren Shrub maple ginger
1 1/2 tsp cornstarch
All purpose flour for dusting
1 large egg
2 Tbsp. raw or sanding sugar.
DOUGH
- Cut butter into 1/2 inch pieces and freeze on a small plate for 30 min.
- Pulse salt and 2 cups flour in a food processor to combine.
- Remove butter from the freezer and add to the processor.
- Pulse mixture until crumbly and butter is about pea-size (30-35 quick pulses).
- Drizzle in buttermilk, then pulse until a rough ball forms (it will be crumbly).
- Turn dough out onto a lightly floured surface and press into a disk. Wrap in plastic and chill for at least 1 hour.
FILLING
While the dough chills, make the filling.
- Remove 2 wide strips of zest from orange. Chop zest into small pieces.
- Cut orange in half and squeeze 2 Tbsp of juice into a small saucepan.
- Add cranberries, granulated sugar, maple ginger shrub, and orange zest.
- Bring to a boil, stirring until sugar dissolves.
- Reduce heat; simmer, stirring occasionally until cranberries are soft (6-8 min.).
- Stir cornstarch into 1 Tbsp of water in a small bowl to dissolve, then add slurry to cranberry mixture.
- Simmer, stirring until filing thickens and looks very shiny.
- Scrape into a heat proof bowl and let cool.
- Cover and chill for 1 hour.

ASSEMBLY
- Roll out the dough disk on a lightly floured surface to about 1/4 inches thick.
- Using a 3 inch diameter cookie cutter or glass, punch out rounds, transfering to a baking sheet as you go (roughly 20).
- Chill until ready to use.
- continue to roll out dough disks and punch out as many more rounds as you can.
- Arrange on a baking sheet.
- Whisk egg in a small bowl and brush edges of each round.
- Spoon a heaping teaspoon of filling into the center of half of the rounds.
- Drape remaining rounds, egg-brushed sides down on top.
- Crimp edges with a fork to seal.
- Place pies on a parchment lined baking sheet and freeze for 15 min.
BAKING
- Preheat the oven to 400 degrees.
- Cut a small slit in the top of each pie.
- Brush with reserved egg.
- Sprinkle with raw sugar.
- Bake until crusts are golden brown and fillings are bubbling (16-18min.)
- Transfer to a wire rack; let cool until warm.
